Lemon Bread

Ingredients

Bread

  • 1/3 c unsalted butter, room temperature
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 c milk
  • 1 c granulated sugar
  • 1 1/2 c flour
  • 1 tsp salt
  • Grated rind of 1 lemon
  • 1/2 c walnuts, chopped

Glaze

  • Juice of 1 lemon
  • 1/3 c granulated sugar

Directions

  1. Pre-heat oven to 325
  2. Grease and flour loaf pan
  3. In large bowl, cream butter and sugar
  4. Add milk, eggs, lemon rind
  5. Beat in remaining dry ingredients (baking powder, flour, salt)
  6. Fold in walnuts; do not over-work
  7. Pour into greased and floured loaf pan
  8. Bake at 325° 1 hour or until toothpick is clean
  9. While loaf is cooling, whisk lemon juice and granulated sugar
  10. Pour glaze over bread while still in pan
  11. Cool 15 additional minutes before removing
