Pumpkin Bread

Ingredients

  • 3 c sugar
  • 3 c flour
  • 1 t baking powder
  • 1 t baking soda
  • 1 t nutmeg
  • 1 t cloves
  • 1 t cinnamon
  • 1 t salt
  • 1 c oil
  • 4 eggs, beaten
  • 1 t vanilla
  • 1 lb canned pumpkin
  • 1 c chopped walnuts (optional)

Procedure

  1. Preheat oven to 350°
  2. Combine dry ingredients in large bowl; set aside
  3. In second large bowl, mix oil, eggs, and vanilla
  4. Gradually fold dry ingredients into wet
  5. Gently stir in nuts
  6. Bake in 2 greased, floured loaf pans at 350° for 1 hour

Notes

  • Amp up spices (nutmeg, cloves, cinnamon) to taste
  • Bland vegetable / canola oil works best
