Ingredients
- 3 c sugar
- 3 c flour
- 1 t baking powder
- 1 t baking soda
- 1 t nutmeg
- 1 t cloves
- 1 t cinnamon
- 1 t salt
- 1 c oil
- 4 eggs, beaten
- 1 t vanilla
- 1 lb canned pumpkin
- 1 c chopped walnuts (optional)
Procedure
- Preheat oven to 350°
- Combine dry ingredients in large bowl; set aside
- In second large bowl, mix oil, eggs, and vanilla
- Gradually fold dry ingredients into wet
- Gently stir in nuts
- Bake in 2 greased, floured loaf pans at 350° for 1 hour
Notes
- Amp up spices (nutmeg, cloves, cinnamon) to taste
- Bland vegetable / canola oil works best
